Aaron Bickham is a native of Rochester, New York, where he grew up working in Restaurants and Pubs since the age of 16. In 2001 he moved to Milwaukee and worked under Mark Weber and Adam Siegal at Lake Park Bistro.
In 2003 he moved to New York City to attend the French Culinary Institute where he graduated and did a 6 month internship at Jean Georges. After that he accepted a saucier Job at Jean Georges Vongerichten’s first restaurant JoJo.
Aaron was part of the opening team at A voce in 2005 with Andrew Carmelini where they both earned a Michelin one star and a New York Times three star review in the first year.
Aaron then moved back to Milwaukee to work as Sous Chef at Bacchus under Adam Siegal for two additional years.
Now he is part of the SURG Restaurant Group and currently an Executive Chef at Charro. Aaron helped open the new Charro in Brookfield under Dominic Zumpano for the opening two months and now is heading up the downtown location and recently has implemented his Fall menu featuring new duck confit tostadas, shrimp ceviche, pork belly slider as well as many more items.
